Peppered Grilling Steak Tacos

Preparation

  1. Heat a griddle pan over a medium to high heat. Grease your pan with olive oil.
  2. Add the steaks to the pan. Cook on each side for 8 - 10 minutes.
  3. Meanwhile, mix together the cucumber and red onion in a bowl.
  4. Finely chop ½ of the pack of coriander. Add the coriander to the red onion and cucumber.
  5. Zest the lime and set to one side.
  6. Add the juice of the lime to the cucumber salsa.
  7. Add the lime zest to the sour cream. Season with salt.
  8. You can heat your tortillas in a pan or microwave if desired.
  9. Once the grilling steak is cooked, place it on a board for a couple of minutes before slicing.
  10. To serve, add a dollop of the sour cream to a tortilla, add a few slices of the grilling steak. Top with cucumber salsa, some of the renaming fresh coriander and some hot sauce or sriracha if desired.
