Pepper and Beef Stir-Fry

Preparation

  1. Heat one tablespoon of olive oil in a large pan or wok before adding 500g beef strips and cooking well (2-3 minutes on each side).
  2. Once cooked, transfer to a plate while you cook the vegetables.
  3. Cut the onions into strips and cook until clear.
  4. Grate the ginger and add it to the pan along with the 2 cloves of garlic. Then add the baby corn and mangetout or your favourite no-prep vegetables.
  5. Return the beef to the pan before adding the soya sauce and honey.
  6. To cook the rice, put it in a saucepan – one part rice to two parts cold water. Bring the water to the boil and cook for the time stated on the packet, or until softened and most of the water has been absorbed by the rice.
