Preparation
Ingredients:
2 tbsp olive oil
1 onion, chopped
1 red pepper, sliced
1 yellow pepper, sliced
4 turkey breast steaks
2 tbsp Cajun seasoning
400g can chickpeas, drained and rinsed
2 tbsp tomato puree
90g baby spinach
Small bunch of parsley, finely chopped
lemon wedges, to serve
Directions:
Heat 1 tbsp of oil in a frying pan over a medium-high heat and fry the onions and peppers for 7 mins until slightly charred and softened. Remove from the pan and set aside.
To the same pan over a medium heat, add the chickpeas to the pan along with the tomato paste, 1 tbsp of Cajun seasoning and a few tablespoons of water. Warm through and then roughly mash with a fork. Wilt the spinach in the same pan with 1 tbsp of water.
Meanwhile, mix the remaining oil and 1 tbsp of the Cajun seasoning and rub over the turkey. Season to taste.
Heat another frying pan over a medium high heat and fry the turkey for 3-4 minutes on each side until cooked through.
Gently fold the pepper and onion mixture and parsley through the chickpeas. Serve with the sliced turkey and the lemon wedges for squeezing over.
