Beef Curry

    Serves 4

    1 tbsp oil

    450g Irish lean diced beef steak

    1 large onion, diced

    1 clove garlic, finely chopped

    2 heaped tbsp medium curry powder

    2 tbsp plain flour

    1 apple, grated

    200ml beef stock

    To Serve:

    250g rice, cooked

    Coriander leaves

    Heat a frying pan over medium to high heat, then add the oil. Season the beef with salt and pepper and fry until well browned all over. Remove the beef from the pan and set aside.

    Turn the heat down to medium and add the onion and garlic, and fry for 5 minutes. Add in the curry powder and flour and cook out for another couple of minutes.

    Add in the stock and apple, and stir continuously until you have a smooth sauce.

    Return the beef to the pan and adjust to barely a simmer. Allow to cook for a further 20 minutes.

    Serve the curry with fluffy rice and coriander leaves.
